Crystalline Fructose

Crystalline fructose, also called fruit sugar, is a fine white sugar that dissolves quickly and is used to sweeten drinks, fruit dishes and home baking. It looks a lot like caster sugar. It tastes clearly sweeter than ordinary white sugar, so a little goes a long way.

What Fructose Tastes and Feels Like

Fructose has a clean, sweet taste with no strong aftertaste of its own. The small white crystals pour easily and mix into liquids fast. They dissolve well even in cold drinks, where granulated sugar often sinks and needs a lot of stirring.

Ways to Use Crystalline Fructose

Crystalline fructose suits anything where you want sweetness to blend in smoothly. Here are some common uses:

  • Sweetening iced tea, lemonade and cold coffee
  • Stirring into smoothies, milkshakes and homemade squash
  • Sweetening stewed fruit, compotes and fruit sauces
  • Making a quick sorbet or fruit syrup
  • Baking muffins, sponge cakes and soft cookies

Baking Tips for Fructose

Fructose behaves differently from white sugar in the oven, so it helps to know three things. First, it browns faster, so keep an eye on your bake and cover it if the top darkens early. Second, it holds on to moisture, which gives soft, moist results but less crispness in biscuits. Third, it is sweeter, so many bakers start with a little less than the recipe asks for and adjust next time.

Fructose also does not cream with butter the way sugar crystals do. For a light sponge, you may want to swap only part of the sugar.

Crystalline Fructose FAQ

Is fructose sweeter than sugar?

Yes, fructose tastes sweeter than ordinary white sugar. You can often use a smaller amount to get the same level of sweetness in drinks and desserts.

Does fructose dissolve in cold drinks?

Yes, it dissolves quickly in cold liquids. This makes it handy for iced tea, lemonade and cold coffee.

Can I swap it for sugar one for one in baking?

Not usually. Fructose is sweeter, browns faster and gives a softer bake, so start by replacing some of the sugar and adjust from there.

Add crystalline fructose to your basket for your next jug of iced tea or batch of soft, moist muffins.

We take great care when preparing and securely packing every order; however, during transportation, parcels may be handled by several parties, including the courier, and despite our best efforts, minor cosmetic damage such as dents, marks, scuffs or damage to external packaging may occasionally occur. Minor cosmetic damage that does not affect the product’s safety, quality or intended use will not normally be considered a product defect. This is particularly applicable to products supplied in cans, tins, plastic containers, boxes or similar packaging. If you receive a product that is broken, leaking, materially damaged, unsafe, unusable or otherwise not as described, please contact us within 24 Hours of delivery by email or telephone and provide your order number, details of the issue and clear photographs of the damaged product and packaging. We may require further information or evidence to investigate the matter and, where necessary, may take up to 14 days to complete our investigation. Where damage appears to have occurred during delivery, we may need to raise a claim with the courier, and you may be required to complete and return any Damage on Receipt (DOR) form or other documentation requested by the courier before the claim can be processed. Some products we sell are price-marked or display a manufacturer’s recommended or printed retail price. Please note that our online selling prices may differ from the price printed on the product because online orders involve additional costs such as picking, packing, packaging materials, warehouse handling, payment processing, website administration and delivery-related costs. You may therefore receive a product displaying a printed or recommended retail price that is lower than the price you paid online. The price you agree to pay is the online selling price displayed on our website at the time you place your order, and the presence of a lower printed or recommended retail price on the packaging does not, by itself, mean that the online purchase price was incorrect. Product images displayed on our website are for illustration and presentation purposes only. Actual product packaging, branding, design, colour, size, shape or appearance may vary depending on availability, manufacturer, batch or packaging updates. Such variations do not necessarily indicate that the product supplied is different from the product ordered, provided that the product itself corresponds to the description and specifications stated on the website. We ask customers to check their order and products as soon as reasonably possible after delivery and contact us promptly if there is any material damage, fault, incorrect item or issue with the goods.
