Almond Flour (Ground Blanched Almonds)

Almond flour is a soft, pale flour made from ground blanched almonds, used in macarons, almond cakes, frangipane and Bakewell tart. The almonds have had their brown skins removed before grinding. This gives a creamy colour and a mild, sweet, nutty taste.

What Makes Blanched Almond Flour Different

Blanched almond flour has no brown skin specks, so bakes come out pale and smooth. This matters in macarons, white cakes and delicate sponges, where dark flecks would show. The flour also has a naturally rich, slightly moist feel, which keeps cakes tender.

In the UK, ground almonds and almond flour are often used to mean much the same thing. Almond flour is usually a little finer, which suits smooth batters and fine bakes.

Ways to Use Almond Flour

Almond flour works best in recipes written for it, where it gives structure, moisture and flavour. Here are some common uses:

  • Macarons and macaroons
  • Bakewell tart and frangipane filling
  • Financiers and simple almond cakes
  • Cookies, brownies and flapjack-style bars
  • Pancakes and waffles
  • A crisp coating for chicken or fish
  • Thickening creamy sauces such as korma

Tips for Baking with Almond Flour

Almond flour does not behave like wheat flour, so a straight swap in a normal recipe rarely works. It has no wheat protein, so bakes rise less and stay denser. Start with a recipe made for almond flour, or replace only part of the wheat flour.

Sift the flour before making macarons, as this gives a smoother shell. Almond flour also browns quickly in the oven. Check bakes a little early and cover the top with foil if it colours too fast.

Almond Flour FAQ

Is almond flour the same as ground almonds?

They are very close, and many UK recipes use the two names for the same thing. Almond flour is usually finer, while ground almonds can be slightly coarser.

Can I use almond flour instead of plain flour?

Not usually as a like-for-like swap. Almond flour holds more moisture and has no wheat protein, so it needs a recipe designed for it, or a partial swap.

Do I need to sift almond flour?

Sifting is worth doing for macarons and fine sponges. It removes small lumps and gives a smoother finish. For rustic cakes and cookies it is not essential.

Add almond flour to your basket for your next Bakewell tart, batch of macarons or almond cake.

We take great care when preparing and securely packing every order; however, during transportation, parcels may be handled by several parties, including the courier, and despite our best efforts, minor cosmetic damage such as dents, marks, scuffs or damage to external packaging may occasionally occur. Minor cosmetic damage that does not affect the product’s safety, quality or intended use will not normally be considered a product defect. This is particularly applicable to products supplied in cans, tins, plastic containers, boxes or similar packaging. If you receive a product that is broken, leaking, materially damaged, unsafe, unusable or otherwise not as described, please contact us within 24 Hours of delivery by email or telephone and provide your order number, details of the issue and clear photographs of the damaged product and packaging. We may require further information or evidence to investigate the matter and, where necessary, may take up to 14 days to complete our investigation. Where damage appears to have occurred during delivery, we may need to raise a claim with the courier, and you may be required to complete and return any Damage on Receipt (DOR) form or other documentation requested by the courier before the claim can be processed. Some products we sell are price-marked or display a manufacturer’s recommended or printed retail price. Please note that our online selling prices may differ from the price printed on the product because online orders involve additional costs such as picking, packing, packaging materials, warehouse handling, payment processing, website administration and delivery-related costs. You may therefore receive a product displaying a printed or recommended retail price that is lower than the price you paid online. The price you agree to pay is the online selling price displayed on our website at the time you place your order, and the presence of a lower printed or recommended retail price on the packaging does not, by itself, mean that the online purchase price was incorrect. Product images displayed on our website are for illustration and presentation purposes only. Actual product packaging, branding, design, colour, size, shape or appearance may vary depending on availability, manufacturer, batch or packaging updates. Such variations do not necessarily indicate that the product supplied is different from the product ordered, provided that the product itself corresponds to the description and specifications stated on the website. We ask customers to check their order and products as soon as reasonably possible after delivery and contact us promptly if there is any material damage, fault, incorrect item or issue with the goods.
