Nutmeg Powder (Ground Nutmeg)

Nutmeg powder, also known as jaiphal powder in Hindi, is the seed of the nutmeg tree ground into a fine, light brown spice. It adds a warm, sweet and slightly woody taste to custards, creamy sauces, cakes and spiced Indian dishes.

Nutmeg powder is strong, so a small pinch is usually enough. It gives you a quick, even spoonful without grating a whole nutmeg each time.

What Nutmeg Powder Tastes and Smells Like

Nutmeg powder has a deep, sweet aroma with a gentle warmth and a hint of pine. The taste is rounder and sweeter than pepper and less sharp than cloves.

It blends in well with milk, cream, butter and eggs. That is why it turns up in so many creamy and baked dishes. It also suits savoury cooking, where it adds depth without taking over.

Ways to Use Nutmeg Powder

  • Stir a pinch into white sauce for lasagne, cauliflower cheese or macaroni cheese.
  • Dust it over egg custard tarts, rice pudding or baked custard.
  • Add it to spice cakes, gingerbread, carrot cake and apple pie.
  • Use it in mulled wine, eggnog or a hot milk drink at bedtime.
  • Mix it into garam masala and biryani spice blends, or into keema and kofta.
  • Season creamed spinach, mashed potato or a potato gratin.
  • Add a pinch to kheer, halwa and other Indian milk puddings.

Nutmeg Powder or Whole Nutmeg?

Ground nutmeg is easier to measure, while whole nutmeg gives a stronger smell when freshly grated. Ground spices lose their aroma faster than whole ones. That is why many cooks add nutmeg powder near the end of cooking, or sprinkle it over the finished dish.

Nutmeg is also not the same as mace. Mace is the lacy outer covering of the nutmeg seed. It tastes similar but a little more delicate.

Nutmeg Powder FAQ

How much nutmeg powder should I use?

A small pinch, or about a quarter of a teaspoon, is usually enough for a dish serving four. Add a little, taste, then add more if needed, as nutmeg can easily become overpowering.

Is nutmeg powder the same as ground nutmeg?

Yes, they are the same spice. Both names describe nutmeg seed that has been ground to a fine powder.

Should I add nutmeg powder at the start or the end of cooking?

Either works, but the end is best for the strongest aroma. In baking, mix it in with the other dry ingredients. In sauces and puddings, stir it in near the end.

Add nutmeg powder to your basket ready for your next white sauce, custard tart or pot of kheer.
