Whole Cloves (Laung)
Whole cloves, also called laung, are the dried flower buds of the clove tree, used as a warm, sweet spice in rice dishes, curries, baking and mulled drinks. Each clove is small, dark brown and shaped a little like a nail. They have a strong, sweet, almost peppery smell.
What Cloves Taste Like
Cloves have a deep, warm flavour with a slight bite and a faint numbing feel on the tongue. The taste is strong, so a little goes a long way. In a pot of rice or a simmering sauce, the flavour spreads slowly and adds a gentle, sweet spice.
Ways to Use Whole Cloves
Cloves are used in both savoury and sweet cooking. Here are some common ways to use them:
- Biryani and pilau rice, with cardamom, cinnamon and bay leaf
- Garam masala and chai masala blends
- Mulled wine, spiced cider and spiced tea
- A whole onion studded with cloves for bread sauce
- Baked ham, pressed into the scored fat before roasting
- Apple pie, poached pears and spiced fruit compotes
- Pickles and chutneys
How to Cook with Cloves
The best way to cook with cloves is to add them to hot oil or a simmering liquid at the start. Frying a few cloves in oil for about 30 seconds before adding onions or rice helps the aroma come out. This is the first step in many curries and pilaus.
Whole cloves are hard and very strong to bite into. Most cooks pick them out before serving or leave them on the side of the plate. For baking, you can grind them in a spice grinder or a pestle and mortar. Grinding a small amount just before use gives a fresher, stronger smell than ready-ground spice.
Whole or Ground Cloves: Which Do You Need?
Whole cloves suit slow cooking, rice, drinks and pickling, where they can be lifted out at the end. Ground cloves mix straight into cake batter, biscuit dough and spice blends. Whole cloves also tend to keep their aroma longer than ground, so many cooks buy them whole and grind only what they need.
Whole Cloves FAQ
How many cloves should I use?
Use only a few at a time. Three or four cloves are usually enough for a pot of rice or curry for a family, because the flavour is strong and can take over a dish.
Can you eat whole cloves?
Whole cloves are not usually eaten, as they are hard and very intense. Most recipes ask you to remove them before serving, or you can simply leave them on the side of the plate.
What is laung?
Laung is the Hindi name for cloves. It is the same spice, and recipes for biryani, pilau and masala chai often list it by this name.
Add whole cloves to your basket ready for your next biryani, batch of mulled wine or homemade garam masala.

We take great care when preparing and securely packing every order; however, during transportation, parcels may be handled by several parties, including the courier, and despite our best efforts, minor cosmetic damage such as dents, marks, scuffs or damage to external packaging may occasionally occur. Minor cosmetic damage that does not affect the product’s safety, quality or intended use will not normally be considered a product defect. This is particularly applicable to products supplied in cans, tins, plastic containers, boxes or similar packaging. If you receive a product that is broken, leaking, materially damaged, unsafe, unusable or otherwise not as described, please contact us within 24 Hours of delivery by email or telephone and provide your order number, details of the issue and clear photographs of the damaged product and packaging. We may require further information or evidence to investigate the matter and, where necessary, may take up to 14 days to complete our investigation. Where damage appears to have occurred during delivery, we may need to raise a claim with the courier, and you may be required to complete and return any Damage on Receipt (DOR) form or other documentation requested by the courier before the claim can be processed. Some products we sell are price-marked or display a manufacturer’s recommended or printed retail price. Please note that our online selling prices may differ from the price printed on the product because online orders involve additional costs such as picking, packing, packaging materials, warehouse handling, payment processing, website administration and delivery-related costs. You may therefore receive a product displaying a printed or recommended retail price that is lower than the price you paid online. The price you agree to pay is the online selling price displayed on our website at the time you place your order, and the presence of a lower printed or recommended retail price on the packaging does not, by itself, mean that the online purchase price was incorrect. Product images displayed on our website are for illustration and presentation purposes only. Actual product packaging, branding, design, colour, size, shape or appearance may vary depending on availability, manufacturer, batch or packaging updates. Such variations do not necessarily indicate that the product supplied is different from the product ordered, provided that the product itself corresponds to the description and specifications stated on the website. We ask customers to check their order and products as soon as reasonably possible after delivery and contact us promptly if there is any material damage, fault, incorrect item or issue with the goods.
