Light Soy Sauce
Light soy sauce, also called thin soy sauce, is a pale brown, thin and salty liquid seasoning used in stir-fries, marinades, noodle dishes and dipping sauces. It is the soy sauce most Chinese and South East Asian home cooks reach for every day.
The taste is sharp, savoury and salty, with a clean finish. It is thinner than dark soy sauce and does not leave a sticky coating on food.
How Light Soy Sauce Differs from Dark Soy Sauce
Light soy sauce is mainly used to season food, while dark soy sauce is mainly used to add colour. Dark soy is thicker, a little sweeter and much deeper in colour. Light soy is runny and adds flavour without turning a dish dark.
The word light describes the colour and thickness, not the salt. Light soy sauce is usually the saltier of the two, so add it a little at a time.
Ways to Use Light Soy Sauce
Light soy sauce works at several stages of cooking, from the marinade to the table. These are some common uses:
- Egg fried rice and chow mein, added at the end of cooking
- Stir-fried vegetables, beef or chicken
- Marinade for chicken, pork or tofu
- Steamed fish with ginger and spring onion
- Dumpling dipping sauce, mixed with rice vinegar and chilli
- Noodle soups and broths, as a salty seasoning
Cooking Tips for Light Soy Sauce
Light soy sauce gives the best flavour when it hits the hot side of the wok. Pour it around the edge of the pan so it sizzles for a moment before you toss it through the food. This gives a deeper, slightly smoky taste.
Taste the dish before adding any extra salt. Many cooks use light soy sauce in place of salt in stir-fries and fried rice. For a simple dipping sauce, mix it with a little sugar, sliced chilli and a few drops of sesame oil.
Light Soy Sauce FAQ
Can I use light soy sauce instead of dark soy sauce?
You can, but the result will be paler and less sweet. Light soy sauce will season the dish well, but it will not give the rich brown colour that dark soy sauce adds.
Is light soy sauce lower in salt than dark soy sauce?
No, light soy sauce is usually saltier. The word light refers to its thin texture and pale colour. Start with a small amount and add more to taste.
Can light soy sauce replace salt in cooking?
Yes, many cooks use it to season stir-fries, soups and marinades in place of salt. It adds a savoury depth that plain salt does not give.
Add light soy sauce to your basket ready for your next stir-fry, fried rice or batch of dumplings.

Some products we sell are price-marked or display a manufacturer’s recommended or printed retail price. Please note that our online selling prices may differ from the price printed on the product because online orders involve additional costs such as picking, packing, packaging materials, warehouse handling, payment processing, website administration and delivery-related costs. You may therefore receive a product displaying a printed or recommended retail price that is lower than the price you paid online. The price you agree to pay is the online selling price displayed on our website at the time you place your order, and the presence of a lower printed or recommended retail price on the packaging does not, by itself, mean that the online purchase price was incorrect. Product images displayed on our website are for illustration and presentation purposes only. Actual product packaging, branding, design, colour, size, shape or appearance may vary depending on availability, manufacturer, batch or packaging updates. Such variations do not necessarily indicate that the product supplied is different from the product ordered, provided that the product itself corresponds to the description and specifications stated on the website. We ask customers to check their order and products as soon as reasonably possible after delivery and contact us promptly if there is any material damage, fault, incorrect item or issue with the goods.
