Monosodium Glutamate (MSG)
Monosodium glutamate (MSG) is a white crystalline seasoning that adds a savoury, umami taste to soups, stir-fries, noodles and marinades. It is used in small amounts, a little like salt, to make savoury food taste fuller and more rounded.
What Monosodium Glutamate Tastes Like
MSG has a clean, savoury taste with only a mild saltiness. It is not sweet and it has very little smell on its own. The fine white crystals look a bit like table salt and dissolve quickly in warm liquid.
On its own, MSG tastes of little more than a savoury edge. Its job is to deepen the flavour of the food around it. Tomatoes, mushrooms and aged cheese taste rich partly because they contain glutamates, and MSG works in a similar way.
Ways to Use MSG in Home Cooking
MSG is most often used in Chinese, Japanese, Korean and South East Asian style cooking. It also works in everyday savoury food. Here are some common uses:
- Egg fried rice, chow mein and vegetable stir-fries
- Hot and sour soup, noodle soups and ramen broth
- Marinades and coating mixes for fried chicken
- Dry spice rubs for meat and tofu
- Gravies, sauces and stews
- Popcorn and snack seasoning mixes
How to Add MSG to a Dish
The easiest way to use MSG is to start with a very small pinch and taste as you go. For a family-sized stir-fry or pot of soup, about a quarter of a teaspoon is a sensible place to begin.
Stir it into the sauce, stock or marinade so the crystals dissolve fully. For a dry rub or popcorn seasoning, mix it with the other spices first so it spreads evenly. Add salt carefully, because MSG already brings some savoury taste to the dish.
MSG Compared with Salt and Stock Cubes
MSG is not a replacement for salt. Salt makes food taste salty, while MSG adds a savoury depth. Most cooks use the two together and often find they need a little less salt.
Stock cubes and sauces come with their own herbs, fat and salt. MSG is a single seasoning, so you control exactly how much goes in and what else it is paired with.
MSG FAQ
How much MSG should I use?
Start with a small pinch, around a quarter of a teaspoon for a dish serving four. Taste the food, then add a little more only if you want it.
Does MSG taste salty?
MSG tastes mildly salty, but its main effect is a savoury, umami flavour. It works best alongside a little salt rather than instead of it.
Does MSG dissolve in water?
Yes, MSG dissolves easily in water, stock and sauces, especially when warm. For dry mixes, stir it in well so the crystals are spread evenly.
Add monosodium glutamate to the basket for your next stir-fry, noodle soup or batch of seasoned fried chicken.

Minor cosmetic damage that does not affect the product’s safety, quality or intended use will not normally be considered a product defect. This is particularly applicable to products supplied in cans, tins, plastic containers, boxes or similar packaging. If you receive a product that is broken, leaking, materially damaged, unsafe, unusable or otherwise not as described, please contact us within 24 Hours of delivery by email or telephone and provide your order number, details of the issue and clear photographs of the damaged product and packaging. Some products we sell are price-marked or display a manufacturer’s recommended or printed retail price. Please note that our online selling prices may differ from the price printed on the product because online orders involve additional costs such as picking, packing, packaging materials, warehouse handling, payment processing, website administration and delivery-related costs. You may therefore receive a product displaying a printed or recommended retail price that is lower than the price you paid online. The price you agree to pay is the online selling price displayed on our website at the time you place your order, and the presence of a lower printed or recommended retail price on the packaging does not, by itself, mean that the online purchase price was incorrect. Product images displayed on our website are for illustration and presentation purposes only. Actual product packaging, branding, design, colour, size, shape or appearance may vary depending on availability, manufacturer, batch or packaging updates. Such variations do not necessarily indicate that the product supplied is different from the product ordered, provided that the product itself corresponds to the description and specifications stated on the website. We ask customers to check their order and products as soon as reasonably possible after delivery and contact us promptly if there is any material damage, fault, incorrect item or issue with the goods.
