Shan Chana Masala

Shan Chana Masala, also known as chole masala, is a ready-mixed spice blend made for cooking chickpea curry. It saves you measuring out a long list of separate spices. Chana masala blends are usually warm, earthy and a little tangy, which suits the soft, mild taste of chickpeas.

How to Cook with Chana Masala Spice Mix

A chana masala spice mix is added to a base of fried onion, tomato, ginger and garlic. Most people cook the base until soft, stir in the spice, then add cooked chickpeas and simmer. Follow the directions on the pack for how much to use.

Tinned chickpeas make this a quick weeknight meal. Dried chickpeas work well too, but they need soaking overnight and boiling until soft first.

A Simple Tip for Better Flavour

A squeeze of lemon juice and some fresh coriander at the end adds a fresh finish. Mashing a few chickpeas against the side of the pan will thicken the sauce naturally.

Chana Masala FAQ

Is chana masala the same as chole masala?

Yes, the two names are used for very similar spice blends and dishes. Chole is the name more common in Punjabi and North Indian cooking, while chana simply means chickpeas.

Can I use tinned chickpeas with chana masala?

Yes, tinned chickpeas work well and are already cooked. Drain and rinse them, then add them to the sauce and simmer for around 10 to 15 minutes.

Do I need to add other spices?

Check the directions on the pack first, as the blend is designed to do most of the work. Many cooks still add fresh onion, tomato, ginger and garlic to build the sauce.
