Shan Shami Kabab Masala
Shan Shami Kabab Masala is a ready-blended spice mix used to season shami kababs, the soft, savoury patties made from minced meat and chana dal. It saves you measuring out a dozen separate spices. You add it to your cooked mince and lentil mixture, shape the patties and shallow fry them.
How to Use Shami Kabab Masala
Shami kabab masala goes into the mixture after the meat and dal have been cooked and ground. The usual method is to simmer mince with chana dal, onion, ginger and garlic until soft and dry. Grind it to a coarse paste, then mix in the masala. Follow the directions on the pack for how much to use.
Most cooks also add chopped coriander, green chilli and a little egg to bind the mixture. Shape it into small round patties and fry them in a shallow pan until golden on both sides.
One tip helps most: make sure the cooked mixture is dry before you grind it. Extra liquid is the main reason shami kababs crumble in the pan. Chilling the shaped patties for 20 to 30 minutes also helps them hold together.
Ways to Serve Shami Kababs
Shami kababs are served in many ways, from a simple starter to a full meal. Here are some popular ones:
- Bun kabab, with a fried patty in a soft bun with onion, chutney and sliced tomato
- Kabab rolls, wrapped in a warm paratha or roti with mint chutney
- As a starter with raita and a squeeze of lemon
- Alongside biryani or pulao, or as part of an iftar spread
- Tucked into naan with salad and sliced onions
Choosing Mince for Shami Kabab
Shami kababs are made with several kinds of mince, so you can pick what suits your household. Beef, lamb, mutton and chicken mince are all used. Mince with a little fat gives softer, juicier patties. Very lean mince can turn out drier, so a splash of oil in the pan helps.
Shami Kabab Masala FAQ
Why do my shami kababs fall apart?
Shami kababs usually fall apart because the mixture is too wet or has not been bound. Cook off all the liquid before grinding, add an egg, and chill the patties before frying.
Can I make shami kababs ahead and freeze them?
Yes, you can shape the patties and freeze them before cooking. Place them on a tray until firm, then move them to a freezer bag. Fry them when you need them.
Do I need to add anything else to the masala?
Yes, the masala seasons the mixture but does not replace the meat, dal or binder. You still need mince, chana dal and usually onion, egg and fresh herbs.
Add Shan Shami Kabab Masala to your basket ready for your next batch of homemade shami kababs.

Minor cosmetic damage that does not affect the product’s safety, quality or intended use will not normally be considered a product defect. This is particularly applicable to products supplied in cans, tins, plastic containers, boxes or similar packaging. If you receive a product that is broken, leaking, materially damaged, unsafe, unusable or otherwise not as described, please contact us within 24 Hours of delivery by email or telephone and provide your order number, details of the issue and clear photographs of the damaged product and packaging. Where damage appears to have occurred during delivery, we may need to raise a claim with the courier, and you may be required to complete and return any Damage on Receipt (DOR) form or other documentation requested by the courier before the claim can be processed. Some products we sell are price-marked or display a manufacturer’s recommended or printed retail price. Please note that our online selling prices may differ from the price printed on the product because online orders involve additional costs such as picking, packing, packaging materials, warehouse handling, payment processing, website administration and delivery-related costs. You may therefore receive a product displaying a printed or recommended retail price that is lower than the price you paid online. The price you agree to pay is the online selling price displayed on our website at the time you place your order, and the presence of a lower printed or recommended retail price on the packaging does not, by itself, mean that the online purchase price was incorrect. Product images displayed on our website are for illustration and presentation purposes only. Actual product packaging, branding, design, colour, size, shape or appearance may vary depending on availability, manufacturer, batch or packaging updates. Such variations do not necessarily indicate that the product supplied is different from the product ordered, provided that the product itself corresponds to the description and specifications stated on the website. We ask customers to check their order and products as soon as reasonably possible after delivery and contact us promptly if there is any material damage, fault, incorrect item or issue with the goods.
